Whenever we have a get-together, Melissa always brings her famous corn dip and a bag of Fritos brand Scoops. It is so delicious and it’s easy to make. It keeps well for a few days in the refrigerator, if there are any leftovers. And if there are leftovers, I get to bring a little bowl home with me for midnight snacking.

You can use regular sweet whole Kernel corn but it is much better if you purchase the Green Giant Steam Crisp White Shoepeg Corn. It does make a difference. And you can chop a regular white onion but I prefer a sweet or Vidalia onion. Just dump all of the ingredients in a bowl and stir to mix.

And I ALWAYS sample this delicious, decadent concoction before I serve. I just want to make double sure that it turned out the way it was supposed to.
When we gather for a Godly Girlfriends planning meeting or to celebrate the completion of a Bible Study, we always eat. Sitting at the table and sharing a meal or snacks or just a cup of coffee is so much better than just getting right down to business.

This recipe is tricky because it is loaded with dairy!!! Well, it’s not really tricky it just has a lot of dairy product in it. It contains 8 ounces of sour cream and 8 ounces of shredded cheese. So, if you are lactose intolerant you will need to substitute ingredients or find something else to snack on.

Serve it in a cute vintage enamelware bowl or plastic Tupperware. It really doesn’t matter because this dip is sure to be a hit for you. You can serve it with the small original Fritos but the Scoops work so much better.

- 2 cans White Shoepeg Corn drained
- 1 1/2 to 2 cups cheddar cheese, grated
- 8 oz mayonnaise
- 8 oz Sour cream
- 1 cup onion, chopped
- 1 bag Fritos Scoops

- In a medium-size bowl, combine drained corn, cheese, mayonnaise, sour cream, and chopped onion. Mix well. Cover and refrigerate until it's ready to use. Serve with corn chips. My preference is Fritos Scoops
I have been enjoying this Shoe Peg Corn Dip for 20 plus year. I made one small addition, finally chopped jalapenos about one half cup, or to taste. And a little bit of jalapeno juice from the jar, if you don’t have fresh jalapenos
