Summertime and salads go together. Try this Grilled Chicken and Mandarin Orange Salad with Jalapeno Honey Mustard Dressing. It is spicy, sweet, crunchy, and delicious. This salad has it all. A salad as a meal makes it even better. Who likes a boring salad? Not me!!!
Try my new summertime lunch favorite. It is so fast and oh, so easy!!!
This salad is jam-packed with flavor. It has a slight Southwest flair to it. The sweet of the oranges, the crunch of the almonds and chips, and the spicy bite of the jalapeno dressing create a flavor party for any taste buds. Use fajita seasoned grilled chicken but you could use just plain grilled chicken. It is not only tasty but it is bright and colorful. You can make a little or make a lot.
On my road trip to the Hill Country, I stopped at Bear’s Market in Leakey, Texas. I grabbed a cup of coffee and a jar of their Jalapeno Honey Mustard Salad Dressing. There doesn’t seem to be a way to order more of the dressing online. BooHoo!!! Does that mean I will have to go back to Leakey to get more? I guess so. But in the meantime, I did a little experiment and came up with a reasonable substitute.
The salad part of this recipe is for one serving. The Jalapeno Honey Mustard Dressing recipe is for 2 to 4 servings. If you use deli style sliced jalapenos instead of fresh the dressing will last a bit longer in the refrigerator.
Over the last year, I have pretty much adjusted to cooking and preparing for just one.

- 1 1/2 cups Organic Spring Mix Salad
- 3/4 cup Grilled Chicken or Grilled Fajita Chicken
- 1/2 cup Mandarin Orange Slices fresh or canned
- 1/4 cup Yellow Bell Pepper (chopped)
- 1/4 Avocado (peeled and chopped)
- 2 Tbsp Almond Slivers
- 2 Tbsp Honey
- 1 Tbsp Sugar in the Raw
- 1 Tbsp Yellow Mustard
- 1 Tbsp Dijon Mustard
- 4 Slices Jalapeno Slices, chopped fine (NOT 4 whole jalapenos) I use deli sliced jalapenos from a jar. You can use fresh,if you prefer but that will be a shorter refrigerator life. .

- Combine spring mix, orange slices, bell pepper, avocado, almond slivers, and chicken. Warm the chicken or serve cold. Add dressing right before serving and toss all ingredients together. Garnish with broken tortilla chips or whole chips on the chips
- Combine honey, mustard, sugar, and jalapenos. Whisk together. Drizzle on salad right before serving.
