Bacon, Jalapeno Peppers, and cream cheese make the best party or get-together appetizers. Cut it up, mix it up and wrap it up and these jalapeno poppers will create a party for your taste buds.

Don’t worry about having to fire up the grill or think about the mess that you would have to clean up. These are especially easy when you bake them in the oven.
Prepping the jalapenos will take the most time. Then, after that, it is pretty easy.

There are just a few ingredients. Let the cream cheese come to room temperature. Preheat the oven to 400°.
To prep the pepper: cut the stems off, cut in half, and remove all the seeds. You can leave the stems but I like to cut mine off, then the whole thing is edible.

Combine the cream cheese and grated cheese. Salt and pepper to taste. I don’t add anything. But, that’s just me.

I don’t like to handle the jalapenos any more than I have to. That was a lesson I learned the hard way back in the ’70s. If that’s you, too just roll up the cream cheese and cheese mixture into a little roll to fit inside the jalapeno half.

Cut bacon slices in half. Wrap the bacon around the stuffed pepper and secure with a toothpick. Line a baking pan (I used a jelly roll pan) with foil and spray with cooking spray.

Pop those poppers into the preheated oven and bake until the bacon is crispy. Approximately 25-30 minutes.

- 12 Jalapeno Peppers 3 to 4 inches long
- 8 oz cream cheese room temperature
- 8 oz Monterey Jack Cheese grated
- 1 package bacon regular sliced (not thick sliced)

- Preheat the oven to 400° Line a large pan with foil and spray with cooking spray
- Cut stems off the peppers then cut in half lengthwise. Remove seeds and membrane.
- In a bowl combine softened cream cheese and grated cheese. And salt and pepper to taste Roll cream cheese mixture into pepper-sized rolls. Or use a spoon to spread it into the middle of the pepper. Wrap 1/2 slice of bacon around each jalapeno half and secure with a toothpick.
- Arrange the jalapenos on the foil-lined pan and bake for 25 to 30 minutes, until the bacon is crispy. Serve with Ranch style dip or just eat them just like this.
